About the Role:

We're looking for a passionate and talented Sushi Chef to join our kitchen team and help deliver outstanding Japanese cuisine in a vibrant, fast-paced restaurant environment.

This is an exciting opportunity for someone who takes genuine pride in their craft, loves working with fresh ingredients and thrives in a kitchen where quality, creativity and consistency are everything.

You'll be preparing beautifully executed sushi, sashimi, nigiri and signature rolls, bringing together traditional Japanese techniques with a modern approach to dining.

Whether you're an experienced Sushi Chef looking for your next challenge or a talented chef eager to develop your skills, we want someone who brings energy, passion and attention to detail to every service.

As a successful Sushi Chef, you will:

• Prepare and present exceptional sushi, sashimi, nigiri, maki and signature rolls to consistently high standards.
• Demonstrate excellent knife skills, fish preparation techniques and attention to detail.
• Take ownership of your section, ensuring smooth preparation and efficient service.
• Maintain outstanding standards of sushi rice preparation, seasoning, presentation and consistency.
• Work confidently with fresh fish, seafood and premium Japanese ingredients.
• Support the development of new dishes, seasonal specials and creative menu ideas.
• Ensure ingredients are stored, handled and rotated correctly to maintain freshness and minimise waste.
• Maintain the highest standards of food safety, hygiene and allergen compliance.
• Collaborate closely with the wider kitchen team to deliver a seamless guest experience.
• Thrive during busy service periods without compromising quality or presentation.

We'd love to hear from you if you have:

• Previous experience as a Sushi Chef within a Japanese restaurant, sushi bar or quality hospitality environment.
• Strong sushi preparation skills, including nigiri, sashimi, maki and sushi rolls.
• Confident knife skills and experience handling fresh fish and seafood.
• A genuine passion for Japanese cuisine, ingredients and culinary techniques.
• Excellent attention to detail and a commitment to consistently high standards.
• A positive, hands-on attitude and willingness to support the wider team.
• The ability to work efficiently and stay organised in a busy, high-volume kitchen.
• Good communication skills and a collaborative approach.
• Strong understanding of food safety, hygiene and allergen procedures.

Bonus points if you have:

• Experience working with premium Japanese ingredients and seasonal produce.
• Knowledge of traditional Japanese fish preparation techniques.
• Experience working in high-volume, quality-led restaurants.
• An interest in menu development and modern Japanese cuisine.
