Duty Manager - Grays
Duty Manager, Prezzo Italian
Your first step into management, with a business that's going somewhere.
You can't miss Prezzo Italian right now. Our refurbished restaurants look stunning, with more on the way, and the food has never been better. Guests are noticing and the momentum is real. Now we need Duty Managers who love running a shift and want to build a career in restaurant leadership.
Who we are
Brava Hospitality Group is the home of great restaurant brands. We're the group behind Prezzo Italian, in towns and cities right across the UK, and a collection of much-loved central London restaurants: Jamie's Italian, Riding House Caf , Nessa, Yasmin, Mortimer House Kitchen and, most recently, Bolo by Gennaro. And we're growing the footprint of every one of our brands. We're restaurant people at heart, and we believe every guest deserves brilliant food and exceptional hospitality from teams who love what they do.
Prezzo Italian has been bringing the Italian classics to towns and cities across the UK since 2000. For our 25th birthday we gave it a fresh start: a brand-new look, beautifully redesigned restaurants, and a menu built around the dishes people love, made fresh and cooked properly. Prezzo Italian is the home of the Italian classics.
We're a business on the way up, and the people who join us now will shape where it goes next.
The role
As a Duty Manager at Prezzo Italian, you own the shift. You open and close the restaurant, lead the team on the floor, and make sure every guest gets the experience they came for.
At Prezzo Italian, it all comes down to two things: the impression we make and the connections we build. Every guest should leave feeling genuinely looked after, not just served. That starts with how we treat each other. Teams who look out for one another, have fun together and take pride in what they do create the moments guests remember and come back for. On your shift, you set that tone.
You'll be joining at the moment the hard work starts paying off. The food is right, and with every restaurant in our estate set to be refreshed over the next 18 months, there's plenty more to come. With your GM and Assistant Manager behind you, this is where you learn the craft of running a great restaurant.
What a great first year looks like: shifts that run smoothly from open to close, a team that looks to you, guests who leave happy, and the confidence to take the next step to Assistant Manager.
What you'll be responsible for
Leading the shift
Run pre-shift briefings that get the team focused and ready.
Lead from the floor, setting the pace and the standard for exceptional hospitality.
Build a team that genuinely connects, with each other and with every guest, and makes a lasting impression every time.
Coach in the moment, and spot the people ready for more.
Delighting guests
Be a visible presence on the floor, making sure every guest's first and last impression is one they remember.
Make sure the Italian classics go out exactly as they should, every shift, every plate.
Handle feedback with grace and put things right on the spot.
Running the restaurant
Open and close the restaurant safely and on time.
Manage cash, tills and stock during your shift.
Keep labour on track as the shift changes.
Hand over clearly so the next shift starts strong.
Keeping standards high
Make sure food safety, allergen procedures, health and safety and licensing standards are followed on every shift.
Keep the restaurant looking and feeling the way our guests now expect.
What we're looking for
Are you a Prezzo person? You're warm, genuine and generous with your time. You love great food and you love people even more. You make every guest feel welcome from the moment they walk in, you lift the team around you, and you take pride in getting the little things right. You bring energy, a sense of fun, and the confidence to make the call.
You're a supervisor or team leader who is ready to step up, or a Duty Manager looking for a business with a future.
Experience leading a team on the floor in busy, guest-focused hospitality.
Calm under pressure. A full restaurant on a Saturday night gets you going.
A people-first approach. You lead by example and look out for your team.
Pride in food and exceptional hospitality. You notice the details, and you care when something isn't right.
Ambition. You want to grow into restaurant management.
Good working knowledge of food safety, licensing and cash handling.
What matters most is how you lead, not where you've led.
