Little & Large Pub Company is looking for an ambitious Head Chef to lead the kitchen for an exciting project in Surrey
We are an independent pub company passionate about brilliant pubs, great food and proper hospitality. We believe in doing things well without making them complicated: quality ingredients, confident cooking, generous plates and menus that give people a reason to come back.

The role
As Head Chef, you will take full ownership of the kitchen and food operation.
You will work closely with our Executive Head Chef and senior operations team helping develop the menu, establish systems and recruit and train the kitchen team.
You will be responsible for delivering consistently excellent food while running a commercially strong, organised and positive kitchen.
You’ll have ownership of:
Recruiting, developing and leading your kitchen brigade
Food quality, consistency and presentation
Supplier relationships and ingredient quality
Food GP and stock management
Kitchen labour and rota management
Ordering, stocktakes and waste control
Food safety, allergens and kitchen compliance
Kitchen organisation, cleanliness and standards
Training and development of the kitchen team
Working closely with the General Manager and FOH team
Building a kitchen culture people genuinely enjoy being part of
Seasonal, produce-led cooking with strong pub foundations, excellent British ingredients and plenty of personality.
Think fantastic Sunday roasts, properly cooked meat and fish, seasonal vegetables, great sauces, brilliant bar snacks and dishes that feel generous and familiar while still giving the kitchen room to be creative.
We’re not interested in unnecessary gimmicks or food designed purely for Instagram. We want proper cooking, great ingredients and consistently delicious plates.
About you
You may already be a Head Chef looking for an exciting opportunity, or a strong Senior Sous Chef ready to take your first kitchen.
More important than your CV is your attitude.
You will ideally:
Have experience in a quality pub, restaurant or gastropub environment
Be passionate about seasonal, ingredient-led cooking
Understand how to run a commercially successful kitchen
Be confident managing GP, labour, ordering and stock
Have strong food safety and allergen knowledge
Be organised and calm under pressure
Enjoy developing chefs and building a strong team
Care deeply about consistency and standards
Want to contribute ideas rather than simply follow a menu
Be excited by the challenge of opening a new venue
