Position
Located in the vibrant heart of the city, Eataly London is dedicated to offering the finest Italian cuisine and products. We are on the lookout for an experienced and hands-on Executive Sous Chef to oversee and elevate the operations of our back-of-house team. Our Bishopsgate store is home to two restaurants ( Pasta&Pizza and Terra by Carlo Cracco ), a production kitchen, quick service kitchens, a bakery, and a pastry lab. In this key and hands on role, you will work closely with the Executive Chef to coordinate the entire kitchen team, ensuring the efficiency of the operations, while also managing wage budgets and financial performance.
WHAT YOU WILL BE DOING...
- Lead and mentor senior chefs across multiple concepts, inspiring excellence with a collaborative, hands-on approach.
- Support the Executive Chef in shaping back-of-house strategy, balancing culinary quality with financial performance.
- Assist in menu and recipe development that celebrates Italian authenticity, seasonality, and premium ingredients.
- Manage food costs, stock control, and portioning to ensure both profitability and guest satisfaction.
- Partner with front-of-house leaders to deliver seamless guest experiences across all outlets.
- Train, develop, and nurture talent across the kitchen team, building a strong pipeline of future leaders.
- Ensure full compliance with food safety, health, and hygiene standards.
- Step in to lead operations in the Executive Chef's absence.
Requirements
5+ years of chef experience, with at least 3 years in a senior kitchen management role.Fluency in Italian and English.Proven experience leading teams within a large-scale, multi-outlet operation.Strong background in authentic Italian cuisine and understanding of Italian products.Ability to manage food costs, budgets, and operational targets.Flexible availability to work evenings, weekends, and holidays.Strong leadership, communication, and relationship-building skills.Proficiency in Microsoft Office (Excel, Word, Outlook, PowerPoint).Right to work in the UK.Other information
